Today was going to be a day of writing about creativity for causes. But that will wait for another day. I have to share with you a cooking success. You've seen my cooking failures, I must tell you about the good stuff too!
September 19th was Day 80. I made Oh-So-Yummy Enchiladas.
I could have heated up the pre-packaged orange chicken or the frozen pizza, but I really wanted to use the two chicken breasts that were remaining in a package in the fridge. Making a meal using what you have in the house can sometimes yield the best results. I had a friend in college who made a meal called mystery dinner. It was basically everything that was left over in the fridge placed into a pot, and stirred.
So, when you're stuck for something to make and you have a few basic ingredients in the house, try these enchiladas!
Trish's Oh-So-Yummy but Oh-So-Easy Chicken Enchiladas
Ingredients:
2 chicken breasts
corn tortillas
pasta sauce
cheddar cheese block (or any cheese)
Spray oil
Place chicken breasts in a pot of water and boil until cooked. When cooked, strip into large chunks.
Spray bottom of a 9"x9" pan with oil.
Fold each corn tortilla in 1/2, placing inside a thin slice of cheese (or two), 2 or 3 chunks of chicken and some pasta sauce. Continue to do this, overlapping the folded tortillas, until the pan is full. Cover the top with more sauce and add thin slices of cheese.
Bake at 400F for 30 minutes, covered with a thin sheet of foil. Remove foil at the last 5 minutes and let the top bubble and brown.
Serve and enjoy! Yumm! It's that easy!
